More than a wing and a prayer

Last week a small aircraft crashed landed on the side of road not far from my store. Fortunately, no was hurt, but frightening none the less for all involved and those who witnessed it. When I saw the online pictures, it reminded me of a recent dream I’d had. It was one of those early morning dreams that seems to stick with you throughout the day.

In the dream, I was standing outside looking up at the beautiful blue sky when I noticed a small plane fly nearby. In just a quick second, it began to fall from the sky. In the waking world, I’m the wife of a pilot and owner of a flight school, so in the dream, I was trying to read the tail number to make sure it wasn’t my husband. To my relief it wasn’t, but terror still ran cold through my veins. I began crying out to Jesus to not let the plane crash and have its passengers die as the plane continued the free fall to the ground. I could feel my heart aching as I prayed and pleaded to spare the life of those onboard. As quickly as the plane began to fall, its engines roared to life again and with just about 100 feet to spare, the pilot regained control. Whew! It was a terrifying 20 seconds that seemed to go on for a lifetime, and I promptly woke myself up.

WARNING! Now Exiting the Comfort Zone!

Hey there, I’m sorry it’s been awhile since I’ve reached out to you. If you’re following me on social media particularly my business page, you know how kooky life these days is.

As you may recall, I’ve ventured out to bring awareness to healthy eating since I became a vegan last year. Well, God is really nudging me toward success and I’d like to say I succeed most days, but sadly chocolate is still my nemesis. He continues to challenge me to get out of my comfort zone by trying new things, sharing my personal story and His plan for obtaining a healthy body and lifestyle.

Gingerbread Cookies

Since my daughter’s return home from college for the holidays, our house has been filled with the sounds and smells of Christmas. Thank you, Lord that you brought my cook, baker and housekeeper home. Haha. No really, she is.

Both she and I admit that our favorite genre of music is Christmas, and that baking this time of year does something magical around the house. It also does unkind things to the waistline, but then again on a positive note, it helps reaffirm goals and resolutions for the New Year.

As new vegans, we were a bit concerned about how we were going to bake this year; however, the baking choices are amazing. I love creative people and the internet is chock full of them. Here’s Olivia’s recipe discovery this week of Vegan Gingerbread Cookies. The recipe can be found on Pinterest

Cute in a “Land of Misfit Toys” kinda way.

Our end product is not as pretty as those pictured on the actual site, but are very cute in a homemade way. I liken it to the Amish (I think it’s them) who when creating their wonderful quilts, intentionally create a flaw in the stitching. They acknowledge that the only thing perfect is God. As a reformed perfectionist, this has become my mantra when painting, writing and now baking. It really takes a lot of pressure off.

That being said, don’t add more to your plate than you need to this Christmas, but if you have a chance to bake, I’d love for you to consider these little gems. Super easy, fun and tasty.

So what’s on your plate?

I’ve never been much of a cook. I guess that comes from my mom being taught how to cook from my dad. His menus came from the South and included fried green tomatoes, black eyed peas, fried green beans, liver, canned spaghetti and fried chicken (which by the way was my favorite). If it fit into the cast iron skillet, it got fried. I learned what she learned. Yet through it all, I longed to know the ends and outs of how to put delicious things together that would tantalize the most discerning pallet like the cooking shows I enjoyed watching.
